Ideally not the classic 'orange' or chinese spiced.

found a nice one with a red wine and port reduction.. will be cooking for the gf's bday so want something a little special

Griddle duck breast, rest. Half large onion, red pepper, green pepper and orange pepper all quite thinly sliced. Stir fry peppers and onion, add a teaspoon of caster sugar and cayenne pepper to taste. Add bag of baby spinach and cook. Crush clove of garlic, fry in olive oil gently til soft, add about five tablespoons of soy sauce, juice of a lemon and tablespoon of honey.
Pile up veg, add sliced duck to top, pour runny sauce over. Yummy.

Marsala, beef stock, beetroot juice, white pepper, butter to give a sheen at the end.

Reduce half a glass of Marsala by half, add a beef stock cube to 200ml boiling water, add to Marsala, then add 100ml beetroot juice. Reduce to desired consistency and check seasonings. Whisk in a cold knob of butter to make glossy.

If you don't want to be ripped off with a litre of beetroot juice from a supermarket, use the juice from a jar of lightly pickled beets and balance any acidity with sugar. The resulting sauce will be deep red and very robust - a perfect foil to the rich pan fried medium crisp breast.

Woah! Massive co-incidence but I fancied duck tonight.

Looks slightly less good than they made it look (aside from the duck going over), tasted lovely though.

Kumquats are always a good replacement for that citrus flavour, drop them in a port sauce or red wine reduction, gives it another level.

Also braised red cabbage with cinnamon spice and orange zest is nice side dish to go with it smile
