Oh didn't mention the pork belly / pancetta and fat / lardo is currently being salted so not ready for photos

Think ill cold smoke some if the chorizo and lightly smoke some of the belly too.

And to be fair once I've got the smoker going it would rude not to smoke some other stuff. Better get some duck for duck bacon and I'll think about what else.
