Fancy but simple recipe/meal for mothers b-day

Right it's come to that time of year again when I start to panic about what to get mother for her birthday. Don't want anything too naf that will get used once and never looked at again and I can't afford to blow the whole credit card on it as I have just moved out into my own place.
Started thinking about inviting her and old man over and cook a nice meal with a nice bottle of wine and drive them home after so they can have a drink.
Does any one have any advice on a nice simple but fancy looking on the plate recipe that I can do?

Would help to know if there's anything they do/ don't like eating in particular, but I always find this one to have a good impressiveness/ effort required ratio!

Do them a lamb tagine with cous cous and flatbreads.
Lamb shoulder, diced in to inch chunks, browned in oil
2 large onions, chopped and coloured, celery sticks x 2
2 cans decent chopped tomatoes
Half a bottle of red
2/3pint of beef stock
Salt, pepper, cumin, coriander powder, chilli flakes
Braise together for four hours at 140c
Add tho handfuls of fresh chopped coriander at the end
It's easy and delicious.
ETA - I meant tagine, not tagone.
