What can I roast in 30mins??

Afternoon all.

This morning, whilst thinking about what I'd like for dinner tonight and potentially lunch tomorrow (if I make enough and don't eat it all tonight), I was thinking that I'd like to be able to bung a load of stuff on/in a baking tray (one of those deep ones), drizzle some oil on it and stick it the oven for 30mins or so while I bugger off out for a run.

So PHers what things can I put in it (meat and veg), that will all take roughly 30mins and go (reasonably) well together??

I got as far as chicken, sweet potato and peppers...and then ran out of ideas.

Lamb, Rosemary, olive oil, Spuds any other root veg.

Fish - get a whole trout on a bed of leeks spuds some herbs lemon cook it in a foil bag all the juices will flavour the veg and create a sauce in 30 mins.

Pork tenderloin cooks pretty quickly, a peeled & cored apple around it (for quick apple sauce) and mixed stuffing laid on top stop it drying out. Microwave a large potato first and then cut it into pieces and drop into the same tray with a little oil/salt/pepper on them to roast in the meat juices. Should take around 30 - 45 mins depending how well done you like your pork.

Mate! Get yourself some chicken breasts and pick up some Maggi So Juicy bags.

Chop up a load of veg even potatoes... anything (onions, peppers, chilis, aubergine, courgette, chopped asparagus, cherry tomatoes..), chuck it in the bag, roast it, grab some ainsley harriot cous cous (about 75p and takes 5 mins to prepare!) and you got yourself a fking awesome dinner.

In fact I made that yesterday and about to smash the rest for my lunch.

Thank me tomorrow.

Chicken pieces, potatoes (halved or quatered), onion (quartered), butternut (large chunks), carrots (large chunks)

Glug of olive oil and stir to coat everything

salt and pepper - maybe a couple of smashed cloves of garlic, some dried herbs or spices

in at 180*C for 30-40 min (you could cover with foil while you're out on your run, then uncover it when you get home, so it can all brown a bit as you get changed.

I'm liking the lamb and root veg idea - didn't think of lamb...

Also the joy of lamb if the oven wasn't quite hot enough and its pink then all the better! if you get home and your chicken is pink your going to be waiting some more time.

My favourite tray bake is :

Chorizo, baby potatoes, mushrooms, onions, peppers, Butternut Squash, Green/Yellow Courgette and a few halved cherry tomatoes. Put in a bowl, toss with Olive oil and S&P then spread on a baking sheet. Add the juice and zest of an orange and some paprika sprinkled over the top. 30-40 mins, turn once until all is nice and golden/slightly charred. lick

Sausages, in a dish with a load of chopped up peppers, onions etc. etc.

In another dish (depending how big your oven is.) empty a loaf of herbs and/or spices plus a tin of tomatoes (or a jar of passata) and a tin of chick peas or similar.

When you get in, chop the sausages up and mix everything together.

Eat.
