I've had one of my cars resprayed all over by a body shop (looks great!). What's the best advice now? Can I put the (soft) car cover on it immediately? Can I wax it immediately or do I need to wait a week or something?

4 weeks min is the usual..

I've learned that what a shop (of any description) tells you and what's actually good practice quite often differ.

For example, when I ask them they WILL tell me something different from 4 weeks smile

I'd second asking the bodyshop, after all, if something goes wrong they'll be the ones getting stick.
And if you do something they say you shouldn't have it could get awkward.

4 weeks before waxing is the norm (although whilst the temp is colder at the moment I'd want to leave it longer and let temps rise a bit) and covering the car will undoubtedly extend the 'gassing off period'.

The bodyshop in question will have the TDS on the products they use. Unfortunately the TDS will not offer a time scale on a car cover.
It would be a guesstimate, a month sounds about right. A breathable cover would be advisable.

what paint did they use ? 2 pack, cellulose. . .has it been lacquered ? oven baked ?. . . .a few extra details could be useful to assess your next move

told if they used the latest water based paints then they can literally be waxed next day?

Find out what they used to lacquer over the waterborne basecoat... It'll (very likely) be 2K.
