I've got into a good routine going to the gym every evening after work. However my evening diet is terrible because I'm normally knackered after work then gym.

Someone recommended baked fish as a really quick and easy meal and more importantly a great source of protein.

I like the sound of placing a piece of fish inside a foil packet with some green veg and then sticking it in the oven whilst I have a shower.

Could anyone help with a couple of quick and easy recipes or any other meals that can be done with minimal prep and cook time?

Most supermarkets do fresh fish in bags you can microwave of bake in the oven.

They do flavoured butters / sauces with them and the chilie sauce is nice and not to unhelathy or you can just get them plain.

Easy enough to steam some veg to go with it at the same time.

What about a stir fry. Get some cold boiled rice, some fresh vegetables, nice chicken breast, chilli sauce 10 minutes and job done.

Sardines on toast or kippers and scrambled eggs are two of my favourite but quite lazy post workout meals. Also salmon, cod or tuna with some sort of tomato/chilli sauce on top chucked in the oven for 10 mins while you cook some broccoli and soy beans is piss easy.

I made a nice salmon stir fry last week, with veg, noodles and sweet chilli sauce.

Jumping on the bandwagon a bit, I've had to change my gym routine from going first thing in the morning (6:30am) to the evening (8pm).

I tend not to have a chance to eat between getting home from work, getting the kids ready for bed and then going out then typically don't eat when I get back. As such for the last couple of weeks I've only really had two meals a day (Normally weetabix for breakfast and soup for lunch)

What do people do who are in a similar situation? (P.S. I don't like fish!)

If I'm heating up the oven I try to make best use of it so load the fecker up. biggrin

I may have 4-6 pieces of chicken wrapped in foil, same for salmon steaks and maybe a tray of root vegetables, onions, squash, etc.
I keep it simple with just OO or butter, lemon and a few herbs/spices.

What I don't need immediately goes into tupperware for the fridge and/or freezer.

Saves a load of time over all, healthful and saves electricity/gas.

Do you actually care about a receipe? These meals are often about protein before bed maybe with omega-3 and/or vitamin C depending on your diet.

Cutting:
Mackerel/Salmon/Tuna/Sardines straight out of the tin with salad cream/vinegar/olive oil.

Raw smoked salmon straight out of the packet.

Bowl of scrambled eggs, microwaved.


Bulking:
8 Fish fingers/full pack under the grill.

Breaded Chicken burgers in the oven.

Plain chicked breasts in the oven.


Usually I'm so hungry I'll eat anything. Having a nice meal isn't a requirement, nor something I can wait for!

Try and pre make some of your post workout meals as it's perfect when you just want to put your feet up after the gym.

Here's one of my favourites which goes well with grilled fish (e.g. seabass or any white fish):

200g raw cous cous, pinch of salt and add 300ml boiling water. Stir and cover for 10 mins. Then fluff up and leave to cool in a plastic bowl.

chop the following veggies:
Spring onions
Cherry tomatoes
Cucumber

Add raisins and almonds/walnuts
Add juice of 1 lemon
Add fresh chopped chillies
Dash of olive oil
Salt & pepper

Mix well and put in tupperware box in the fridge.

When you're back from the gym, fire up the grill, jump in the showers. Come out, season fish - rub a bit of rapeseed oil and sprinkle mix herbs, salt & pepper and put under grill 6/7 mins each side and serve next to cous cous. Delicious lick

If you can't even be bothered to cook, pair the cous cous with some smoked salmon or break up a pre cooked roast chickens (minus skin).
