Wife loves hot food so I've got some sirloin and have minced it myself... Check me out (well I bought a kitchen aid so it needs use)

Think is I don't have a recepie so does anyone have a good one I could use to make this come to fruition?

Its tonight and really need to get it ready for 7.30pm !!!

Salt, black pepper, finely diced Jalapeno and smoked paprika (or just normal paprika if you haven't got smoked), splash of Worcester sauce.

Thats it.

My basic chilli burger recipe is (for 500g meat):

- Chillies (obviously). Which type depend on my mood - generally I use bird eye or Indian finger chillies - although smoked chipotle are also good
- Half a medium onion, grated
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Dunn's River All-Purpose Seasoning

No egg, breadcrumbs, or any of that crap. I just mix it all together with my hands in a big bowl, then squash it into presentation rings on a foil-covered baking tray.

Vinyl gloves are a worthy investment for the mixing when raw chillies are involved. You do not want to remove contact lenses with remnants of chilli on your hands.

I got a box of 100 from Amazon for £5, which are also useful for any messy, smelly jobs such as scaling and gutting fish, or dealing with game.

They are cooking.... Had to do two without Worcestershire sauce due to coeliac.

Vs the burgers I've made previously (all with egg, breadcrumbs and crackers- yep gluten free then too makes it a tad harder) two are falling apart.... I added horse radish too for extra kick.
Due to me being a guy who isn't good at cooking I've gone OTT on Sirloin .... 2kg for 4 burgers.....think ill be having some of the Mrs helping too tonightsmile if I can force it in.

Oh well lets see how it turns out. Personally I blame swigging 6 Thatchers KATY while making them as the culprit if it dost work out winksmilesmile;)


Need next time Habaneros though my local Waitrose do not stock and it isn't a small store...

The key thing to getting them to "stick" together is salt and time. Aim for 1% salt content and you need to really mix it in well then leave the beef to rest for at least a couple of hours. This breaks down the beef and when you remix and shape the burgers they'll hold properly.

2Kg of Sirloin? Epic stuff, but unless you serve them really rare they'll be quite dry so watch out!
