Sugar coatings are not applied molten. Dad worked for Mars for 20 years and I was lucky to take a factory tour. The process for any hard shell coating on jelly / chocolate is the same.Centre is made on their own production line. Once the centres are made, they are put into a bin which looks and acts like a cement mixer. The bin rotates at about 20-3o RPM. The shell coating is inserted in powdered form and is basically tumble-dried onto the centres. Takes about an hour for the coating to be applied.
Once done, the newly covered sweets are put into polishing bins where a polishing spray is applied and they rub against each other to a high shine. Once the shine is applied, they're put onto another production line where letters such as M for M&M's are printed on them then packaging etc.
Coating / polishing process, the bins are kept at a steady < 50 degree C temperature. Friction does generate a little heat so the bins are cooled to the steady temperature. Nothing molten at any time.
