Dried flageolet beans: I soaked them in cold water overnight, as instructed, then drained them, put in clean water and boiled for nearly 2 hours - and they're still like bullets! What have I done wrong. The pack doesn't say to add anything, but should I have?

Sounds like you did what you should, as long as the water wasn't salted they should be fine after soaking and a couple of hours. Just let them simmer some more.

We've all experienced The Beans That Won't Cook.

As above, don't add salt until they're cooked. I also find that the older they are, the longer they take.

Beans can go hard-hard-hard-hard-(x20)-bit-hard-mushy. Just keep going for longer.

Did you add salt to the cooking water. If you did, don't it makes them go hard.

Thanks everyone. Just to clarify, no I didn't add salt, and I finally gave up at 7.30-ish last night. We had fish pie from a major supermarket instead! Regrettably the beans were consigned to the bin.
