Offal...who eats what?

Until recently, the idea of offal was always off-putting to me, however, since making friends with a butcher, I have learned the joys of some bits of offal.

I am now quite partial to kidneys, and faggots (made the traditional way).

Does anyone else eat offal, and if so, can you recommend some recipes and parts/cuts of the animals to try?

Liver, bacon and onions. I like it so that the edges of the floured liver goes all crispy but it's still pink in the middle.

Stuffed lamb's heart is another favourite. You can do loads of stuffings and braise it as a tagine.

The best food I've ever eaten was made entirely from offal, while at catering college, by a local head chef with many stars. President Mitterrand used fly over in a jet for lunch, as he liked his dishes that much.

the cats and I often have a dinner of liver, bacon and onions.

liver is very cheap too, a big enough pack for a quid from tesco.

the missus always moans when I have liver (which is normally twice a month) as I always get blood and flour all over the kitchen, apparently.

the key is liberal use of flour and not to overcook the liver...

Well my friend has a haggis recipe and will make one for me...so that's gonna be interesting.

Next on my list is liver...will try lambs first, then pigs...I am happy with kidneys at the min, especially as I can get them for 20p each, which is better than the supermarkets smile

I love haggis. Tongue is also very nice. I had a massive plate of lamb's liver with a bacon and onion gravy and mash the other day. Lamb done in seasoned flower and lightly fried. I didn't enjoy it that much, or at least not as much as I used to.

Pretty much all of it except tripe - that's just a texture thing too, not a huge fan of gelatinous squidgy stuff.

Pigs Pluck is the way to go. Lungs, wind pipe, heart etc. Mince up and make Faggots

Mrs isn't an offal fan, so it tends to be limited to eating out when I get anything like that. I used to have faggots as a kid, and love them - apparently they have come back in favour since the credit crunch due to their relatively low-cost. I absolutely love haggis and liver and onions, although my Mum always used to cook the liver so it was like leather... (you'd think after all these years she'd know how to cook on an aga!)

Not put lungs and wind pipe in my faggots ever, and I think my customers would be happier if I didn't.
