Cheese and potato pie

Cheese & onion pasties are for the most part a little cheese mixed with a lot of potato. That's what I would do, maybe mix in a little sweetcorn to alleviate the stodginess & serve with spring greens or broccoli.
Alternatively, go with Dauphinoise - it's a classic for a reason, or maybe a cheesy variant using a cheesy bechamel sauce & baked with cheese on top. It's all about what you can cook up in your mind!

Hows about carrot and onion and cheese?
Grate carrot fine - preferably in a food processor, chop onion, fry and sweat in butter. Grate Cheese. Season with pepper ( maybe salt if unsalted butter )
combine the three add to short crust pastry lined dish, apply a short crust pastry top, oven at around 180c until the pastry is browned.
I reckon on three good sized carrots, a large onion, and as much cheese as you dare, I dare about 200g gives you an traditional farmhouse style pasty.
Serve with taters cooked as you wish, mash, boil, fried, for potato kicks.
