Although, I found that it simply doesn't make enough yorkshires for us. So I increase the amounts by a random factor, from memory it goes from 75g to 125g of flour and rough equivalent for everything else, except eggs, which I just use two of.
Always turn out well.
As above, fat must be proper hot in the pan before adding the mixture.

From the Radiation New World cookery book ( 1968 edition )
4 oz plain flour , 1/2 pint milk , pinch salt 2 eggs , 1 oz beef dripping.
Mix the milk, flour, eggs and salt. Whisk briskly for 3 or 4 minutes, untill mixture is smooth and bubbles rise and pop.
Let stand for at least an hour.
Heat oven to gas mk 9. Dripping into roasing dish, ready when starting to smoke. Add mixture, into oven for 25 minutes at gas 9.
End result, perfect!
If doing Toad in hole, I do the sausages in top oven on their own at mk 5 , as against in the pudding.

Learnt from my mum what it should look like, then away you go.
Easy and cheap to experiment too.

Did anyone by any chance watch Food, Glorious Food the other day? It was the Yorkshire episode, and some guy made his twist on the classic Yorkshire pudding with duck and hoisin sauce. Not exactly my cup of tea, but did you see the Yorkies that he made?! They looked immense and would love to be able to make them like he did. Mine usually sme out a like the pictures above, which is no bad thing, but seriously, if you haven't seen it, catch it up on ITV.

Our version of Toad in the Hole, cut up some spicy Cumberland sausage into small pieces. Prepare pudding batter. Cook sausages a little to get some of the fat out.
Use 3 inch diameter tins, preheat very well with a very small amount of oil, smoking hot, two or three pieces of sausage into the tin, add batter. Individual sausage toads.
