Cold chicken, home made chips, big fat pickled onions.

Always have it the day after a roast.

Jar of curry sauce......our Roast chickens always do 2 meals.

Thai green or red curry. Works best with chicken that's already been cooked.

Or get a cat. Cats lurve chicken.

This. Doing it this evening for dinner with my left over chicken. I use the Jamie Oliver left over turkey and leek pie recipe and just substitute with chicken.

Risotto is another option, if you can be arsed with the faff, add the chicken, sauted mushrooms and frozen sweetcorn towards the end.

Chicken pilaf.

Rip chicken into bits, bung in a pan with some curry spices, stock, chopped dried apricots (or whatever else you fancy) and uncooked rice.

Pour in boiling water, cover and simmer until the water's gone or the rice is cooked.

Helps soften the chicken if it's dried out a bit overnight.

Really quick, very easy and bloomin' gorgeous.

Thanks guys, might go for the lazy option and chuck a jar of thai green over it and have a massive naan bread. The wife is ill so I get free reign and thought it would be good not to waste it - the cat will get the scraps!

I like to tear it up and saute' it with some diced up jalepenos then fold it into a 4 egg omelette with some good strong cheese. Cheddar or Comte work well.

Tasty as fk and really quick.

Pasta, peas, carrots. mayonnaise, salt and pepper and mix together with strips of chicken.

Just had this very bowl of food with yesterdays left over roast. lick

Chucked a jar of sharwoods korma over it.

Once you've stripped the carcass make your self a load of stock and then make that in to soup!

Chop up a chili, couple of garlic cloves and get a teaspoon or so of capers.

Fry quickly in olive oil.

Chuck the zest of a lemon in, then your chicken leftovers

Squeeze over half the lemon, fry away until heated through.

Serve on pasta with some chopped basil and parmesan.

Definitely this. Maybe put some barley in as well or some orzo, we often make soup from chicken leftovers, you can freeze it too.

A bit O/T but how good is Curry Sauce?

I've been naking my own sauce, a bit of a ballache really and never completely satisfied with the result.
