So im looking for some wheels possibly 18" for a project im planning which include wheel arches at the moment iv got r17 front and rear but when the arches are fitted will need some wider wheels to fill the arches an extra 40mm onthe front and 20mm at the rear would i be able to acheave this just by offset alone or wider wheels or spaces

I'd be concerned about how the car will drive with such large offset changes to be honest. I'd be even more concerned about large offset changes which were different front and rear. The rear changes are not such an issue in themselves but the front definately is. That'll screw your steering geometry right up, and the outside shoulders of the tyres will end up significantly further forward and/or aft in the arches on full lock.
