I was looking at the Technical Information section on the Aston website and for my car there are a number of Service Bulletins that apply to my car (V8VR 2008).
The car was serviced last Nov at AM Edinburgh, would they check for these service bulletins and if required apply them to the car?
Does anyone know if dealers do this at the service automatically?

No, they will not. This is different from a recall notice which is always safety related. Service bulletins are to help the service department in diagnosing and fixing previously-identified or recurring problems once they are brought to the the dealer's attention by the customer. They will not freely perform all of them just because they are issued by Aston.

Dealers check for Service Actions, which are specifically listed as an item to check on the service record sheets in your owner's manual. Safety Recalls result in letters to the owner directly. Service Bulletins are like Karl says.
