Amateur runner - starving hungry all the time!

Thought better to post this here rather than in F,D+R
Bit of background: I'm a 20 year old medical student living in Brighton - I'm 5'11 and weigh ~72kg, so not heavy, but I was quite out of shape (and getting that way again post Easter holiday) so I'm still a bit flabby. Started running more seriously last term, trying to go 3-4 times a week and slowly pushing up my regular distances to an arbitrary 10k mark and beyond. Also helps that I'm supposed to be trekking in Peru at the end of August so I'm working towards that.
Anyway, the running is going fine and I'm making slow but steady progress again. The only problem is that I'm starving hungry throughout the day and I'm wondering if there's anything that's not too heavy on the calories as I pile on weight far too easily but still quite filling (while giving me the energy to keep running) - yes, I ask a lot... Oh and I'm otherwise healthy.
Quick rundown of an average days food:
Breakfast: Bowl of cereal (weetabix at the mo)
Get to uni: Coffee, banana
10am: Banana, water
Somewhere between 11 and 1 I'll have a carrot, maybe another coffee (decaf)
1pm: Lunch: Salami, lettuce, tomato, mayo sandwich on wholemeal bread, carrot, apple
Then another apple some time in the afternoon.
7/8pm I'll have dinner, usually a chicken curry with rice or pasta or something (60g rice, around 90g pasta)
So any input? Happy to listen to whatever.

What is your main goal? Is it to get fit or to lose the minimal amount of fat I would assume you have at your height and weight. I am 5'11" and 72kg and I am about 10% body fat at the moment. I used to run a lot 30-40 miles a week until I got a knee injury. I now run 2 times a week 5k and 8 miles. The rest of the time is weights and HIIT. I took some advice from guys on here who told me to use compound movements to gain strength, this has improved my core strength for running no end and cut my fat % pretty quick.
If you are not willing to change your exercise regime I would say with regards to your eating try and eat the majority of your carbs early in day so you can burn them off.
I'm running for fitness, viewing any reduction in body fat as an added bonus really.
I run mainly because it's free to do - I'm a student after all and on an increasingly tight budget. Like I say, I want to be fit for my trip to Peru. Not expecting the trekking itself to be necessarily too arduous for me, it's more wanting to limit any impact the altitude has and so my doing cardio hopefully I can limit that (some very dubious science there, but hey ho).
I'm looking to get "big" or what have you, more just exercising for the feeling of being healthier. Before I was thin (ish) but impossibly out of shape - couldn't run 500m let alone 5k...
