Need some summer hols suggestions

We've taken the decision to block out two weeks in August for a holiday for myself, mrs_y3k and teenage_y3k.
We've don't eh usual scan of the brochures and so far have yet to find anything that jumps out at us. The local travel agents are only interested in selling their brand, and the indie we are talking to is struggling ...
Can any of the PH travelers help ?
Our troublesome (it seems) criteria
1) NOT SPAIN - Parents live in Spain, so we would just have constant, ohh you could stay here ....
2) We need a studio type place. teenage y3k is too old for room sharing, but equally we dont want him miles down the coridor etc. Most hotels we've looked at can't guarantee adjoining rooms.
3) We're not looking for places that are full of 'linekar's bar, all day breakfast with REAL english sausage' etc etc.
4) Conversely we do want to be able to go out in the evenings, wonder down to the sea front and have a nice meal and watch the world go by.
5) Whilst we like having a few days by the pool over the holiday, we do like to get out n about.
6) Definitely not Spain

I am off to Croatia next month and think it would suit the majority of your requirements, whilst being an area on the up.
I'm staying in Bol next to Zlatni Rat beach:

However other areas e.g. Hvar, Dubrovnik, Zadar etc. will be equally as nice and there are so many places to see e.g. Palaces at Split, Trogir and Krka Lakes national Park etc:

Everything is (or was when I last went) very cheap! - Meal out for <£10pp and beers in nice marina bars for £1.50!
Just need a hire car to get around but both Easyjet and Ryanair (amongst others) now fly to the Airports so you can book a villa/stuido very cheaply and arrange transport seperately.
Our Aparthotel cost us £300 for 12 nights, but we have chosen to drive, having a few city breaks en-route, the cost of petrol @35-40mpg equates to the same cost as the flights without the worry of hire cars etc.

Will Italy do? And swap the sea for Lake Garda, it sounds about right and is a very pretty part of the world.
We stayed in Lazise last summer...
There's loads of campsites set back from the lake, tents, apartment type things, villas and hotels.
You're generally spoiled for choice on places to go out in the day and evening. As it's not a British tourist-y destination you can eat at 'proper' Italian restaurants and drink at bars along the front. There's towns up and down that stretch of the shore so you can always walk along the path to other places.
We did boating and swimming in the lake. There's also a really decent theme park just down the road - GardaLand.
Verona is only a short train ride away as is Venice (A bit further, just under 2 hours I think). Milan is similar but in the other direction.
As it's PH, Maranello etc shouldn't be too much effort. And the Alps and passes are on the way if you drive
