Fresh mackerel with lemon in foil. Simple is best.

I did cod with lemon, butter, little chilli and fresh herbs in foil a couple weeks ago. Just wrap it in foil and cook it on the indirect heat.

Or once did whole sea bass, not in foil but just put some slits into the fish, lemons, basil, chilli, garlic and alt into the slits and rub over the rest of it. Again cook it indirectly and then move it over for the last few seconds to get extra charcoaly flavour.

Try a bulb of fennel, very thinly sliced, including the frondy bits.

Tie the fish up with a few pieces of string, baste with olive oil, salt well, and indirect cook it.
