Trip to Spain and Portugal - Ideas needed

In just over a month i'll be heading off on a 2 week road trip of Spain and Portugal.
The only plan we have set in stone are arriving in Santander on a Saturday, and leaving 2 weeks later!
We've had a thought of heading down through Spain, heading along the coast into Portugal, then up through Portugal, bit of time in the north west of Spain then back to Santander.
The Drive Espana routes look like a good source of inspiration, but if anyone has any recommendations of routes, roads, gems of places to stop at it would be greatly appreciated.
