I was going to do a poll asking whether you eat the skin or not, but a bit of Googling reveals that cooking the fish with the skin on is a southern prediliction. Oop North, them fishes are cooked entirely skin-free.
So what's hot and what's most definitely not, out there in fish and chips world?

This from my local is about as good as it gets for me - a nice thick piece of fish that isn't in the least bit dry, no skin (have had this in NW Seaside resorts, Southport for example), cooked in beef dripping, batter crisp on the outside but slightly soggy near the fish, few scraps, plenty of salt and brewed condiment.

Yes. Haddock, skin on. Not only does it help keep the fish intact it has a certain flavour which I enjoy. Given the choice, always skin on.
I also prefer the texture and flake size of haddock to cod. Not to mention the known supposed issues with the latter with bacteria/worms.

In Estonia they make beer snacks from crispy fried fish skin. Noms.
