well its impossible to answer in full of course, but it usually a combination of the unloved, forgotten and those who were young at the time remembering cars they saw around at the time.
So, I'd say the Xj220 finally getting the recognition it deserved (is there any other car which can do 213mph, hold the outright road car record at the 'ring for 9 years, with an engine from a group C Le Mans racer, and the Xj220 itself was raced at Le mans and won its class (yes it DID, ACO...), for so little?)
The earliest survivor, chassis 002 sold this week for....£72,000.

Currently there is a Mk1 escort for sale £65k....
Others I would include are from the 80s now as the 70s have probably all been recognised now. So I'd say hot hatches like 205GTI, Mk2 Golf GTi, and others like the 944 Turbo, 928. The aston V8 will start to emulate its cousins from the 60s.
The F308 (magnum) and possibly trans am's, but only in black (KITT)

I do think in another 10 years those who had the highly modded shopping cars from the 90s and 00's will have the money to relive their youth. So Novas, Imprezzas et al with big stereos will start to become popular
You might also want to look at what China are buying. have they discovered the 911 yet? If so, they could be buying and shipping them out, so demand will outstrip supply and prices will rise
Mind you, legislation might mean in 20 years time we're not even allowed to read about those nasty, planet killing combustion engine vehicles anymore, nevermind drive them!

1980's fast & still cheap ? Rover Vitesse, Sunbeam Lotus, Lotus Carlton, XR3 turbo, Sierra Cosworth.
They're all dull cars with hotted up engines, badly made but in large quanties and down to a price.
I'd vote for the original Quattro; fast, in its day and innovative in design, a gamechanger unlike the BMWs and Porsches, which are just the same as they've always been but a little bit better with each sucessive model.

The 4-cylinder 8-valve Mercedes 190s are still cheap and plentiful - they'll be like classic stalwarts without ever being hugely valuable. But the 16V models started going up about 3yrs ago. But they are so widely available I don't think they're destined for E30 M3 levels (ever).
NSX prices have also firmed up. rare when new and moreso now (exports of the later facelift models to Hong Kong, plus very easily written off). None around for under £20k (not even automatics). I think they're a good bet (if you have one!)

M635 are beginning to rise far away from "ordinary" 635csi's
A good M635 is double the price of the equivalent non-M version. Approx £10k for a minty 635 these days and £20k+ for the M version.
I'm not sure I see either of these rising sigificantly in the short to medium term. They had a big jump a couple of years ago and now seem to have settled.
