I'd opt for Durness all the way up the West coast and back to Leeds with detours...
Broadly without looking at a map,A68, A82, A87, A832, A894 etc.
(Lots of nice roads in the boarder country - if its an A70 something (particularly 1 or 2) or B70 something, its bound to be a good road!!)

This'll get you Glencoe (do a search for Skyfall & Glen Etive if you want to re-enact the scene where Bond & M stand outside the Aston in the massive glen), within sight of Skye, though you can cross the bridge & drive round part of the island in a couple of hours, the Bealach na Ba and an overnight in Applecross on day 1.
Day 2, the low road out of Torridon, the A832 (beware the Talivan...), skirting Aviemore, Cockbridge - Tomintoul and the Lecht & Glenshee ski centres, Royal Deeside around Balmoral, the Forth Road Bridge and the Devil's Beef Tub.
If you could add a 3rd day, you could cover much more of the north west of Scotland and run at a less demanding pace.

I would suggest from the A66 east of Bowes take the B6277 to Barnard Castle and Alston. The section from the Langdon Beck Hotel across the fells is as good as it gets. From Alston take the A689 to Brampton and M6 J44. Well worth the extra time and it keeps you away from the elephant racing trucks on the A66 plus the several single lane sections where progress can be slow and overtaking hazardous.And when at Glencoe, how could you omit the Scotsburgring (B863 loop round Loch Leven)?

I would also avoid the A9 south from Inverness. Boring and always the chance of encountering unmarked plod at just the wrong moment. Take the B9006 across Culloden Moor to Croy. Then via Cawdor using the B9091/B9090/B9101 to the junction with the A939. Turn right and head for Grantown-on-Spey.
