Cooking in bulk for the week ahead?

What would everyone recommend as an easy/convenient meal to make in bulk for lunches/during work. Currently looking to bulk up so looking for about 3100 calories per day of which 1500 will need to be consumed (in 3 servings) at work. I have been using ham salads along with peanut butter which have been doing the trick if not a bit light on the carbs but am looking for a few ideas for something different, ideally that could be made on a Sunday and last til Friday.
My first thoughts were around homemade chilli con carne, chicken currys, etc but wanted to see if anyone done this already and had mastered the bulk Sunday prep for the week?
I have a freezer at home and a fridge and microwave at work which should help. I am probably looking about 450-500 cals per serving.
