Bit of a strange question here, but over the past 15 years or so I've accumulated 3 pensions, some life insurance and other bits and pieces.

I'm aware that I am being somewhat responsible and am planning for the future, but I don't think I'm necessarily doing it in the most effective way - for example I have pretty much just randomly picked the mid-level funds to invest in and have never changed them, nor do I have a will!

So, it would be a huge shame to do the hard work of putting the money in, but then waste the opportunity to maximise it. I've a stable family now, so want to ensure its all 'belt and braces' should something bad happen.

Would an IFA be the person to run through it all with me - even though I would probably not be buying anything from them? I wish I could do it myself, but my latest pension docs have sat waiting for me to look at for 3 months!

Sounds to me like a decent IFA is exactly what you need. Paying a fee would be the way forward for them to help you organise your financial affairs appropriately.

The fee might be quite chunky, though. I would expect it to take an IFA a good few hours to do this (no idea how many in practice) and their hourly rate is unlikely to be low.
