I have a J reg (92) S3c, running fine - just come back from a trip down to Bordeaux with no issues. My Dad bought a J reg (91 S3 about 2 weeks ago. On comparing the 2 of them it appears that I don't have MAF sensors and that there have never been MAF sensors ie no wiring for them in the engine bay.
Could that be right?

That's because you have an S3C and he has an S3. The C=Catalytic Converter and you'll have Lambda sensors and no AFM whereas the S3 will not have a Cat or a Lambda sensor but will have MAF meters. For the Cat the Lambda sensor detects the exhaust gas output and the ECU adjusts fuelling on this whereas on a pre-cat the AFM gives the ECU an air flow in reading and the ECU adjusts fuelling on that (in simplistic terms)
