I have some beautiful rainbow trout here.

How do you cook yours?

Whole fish? Stuff with butter and almonds, wrap in foil. Cook in the oven, and finish off under the grill. Delicious!

^^^ That, or if you want a 'healthy' option, pan-fried fillets with the pan 'de-glazed' afterwards with a mixture of orange & lemon juice, parsley and capers, served with some sweet potato wedges and broccoli!

It's a subtle flavour, so I just season with salt & pepper, and grill.

Squeeze of lemon over when cooked.

For whole fish.
Stuff it with a couple of bits of lemon sliced and halved anda couple of sprigs of dill. Wrap in foil and bake at 200c for about halfan hour.

Depends where they are from - if any risk of earthiness, I smoke 'em, cold or hot. Otherwise, bake in foil, slash and grill or fillet, roll in seasoned flour and fry. Baked or grilled, they get butter and lime/ginger/chilli/garlic/coriander or lemon/bay/thyme or lemon/dill

Fry some smoked bacon / lardons in a pan and then add the trout. Read this in Rick Stein book ages ago and it is superb!
