I take a 400g piece of sirloin or rib steak which looks to be well-marbled with fat at around around 15% and chop it finely.
To the resulting chopped meat, I add half a grated onion, salt and pepper, plus a teaspoon of 'Dunn's River' all-purpose seasoning. A chopped chilli if I fancy, plus some chopped flat-leaved parsley.
No need for egg or breadcrumbs, I squelch it all together with my hands and form it into a flattish oval. That goes into the fridge to firm up for half an hour or so, before going on either the grill or BBQ.
The above gives a nice chunky texture, rather than being 'fibrous' as mince can be. I dish up my burger either just with salad, or in a grilled ciabatta bun with melted cheese on top, plus some thin slices of red onion.

I make something very similar (it's the seekh kebab recipe from Kenny McGovern's 'The Takeaway Secret'), and I can assure you it's delicious.I make it as balls to either dip in chutney / raita, or cram into a toasted pitta and top with onions and chilli sauce.
A bit left field, but everyone who has tried them likes them

Few mentions of cheap mince. Stuff I get from the butcher is not expensive and a nice balance of fat and the coarseness. Used a cheap packet from a supermarket once and it fell apart on the BBQ when the water boiled up in the meat. What sort of cheap are we talking of?
Edit. I did try blue cheese but it turns to mush. Needs to be a good gooey cheese. Some of the cheeses separate.
