I've just come back from Turkey and fallen in love with aubergine but I have no idea what to do with it or how to cook it. Any suggestions?

Blend it and give it to your cat(s).
Or grill it. And give it to your cat(s).

Did you know it's also called a Zhuccini and Egg plant (in Oz). smile

its also nice if you cut it into wedges the size of jumbo chunky chips, deep fry it until lightly golden, then put a sauce on it. It melts in the middle but is crunchy on the outside. Most sauces work, e.g. fry onion and garlic, add mushrooms, deglaze with wine and herbs, thicken with a little flour.

if your aubergines are large (rather than the little Asian ones) cut them open and salt for 30 minutes to draw some of the bitterness out.

cover them in butter , oven bake them and then peel them . once cooked peel the skin off and curry the remains . quite possibly the tastiest thing you will ever eat .

Gorgeous smoked aubergine dip from the middle east. Amazing with some warm flat bread/ most arabic breads.


I also quite like it seasoned with oil, salt and pepper and then griddled. Nice in salads with a punchy chilli coriander dressing.

please bear in mind that aubergines vary greatly in taste even from the same batch . so if your first attempt tastes ok , but seems to be lacking , do not give up

Half lengthways, scop out the insides and chop up and fry the remains with onions, mince, tomatoes, usual mince stuff.
Put mince stuff in the scooped out outsides, cover in greater cheese and bung in oven till done.

Nom, nom, nom!

I either do them as chips or slice them into thick discs shallow fry them then melt some cheese on top with a few spices.

OP, if you can, buy the aubergines from from an asian/Indian shop as they're much cheaper than in supermarlets.

Strangely enough I cooked Aubergine Parmesan for the first time last night with a very similar recipe to the one above but using Cheddar, Emmental and Parmesan.

It was ridiculously good even if I say so myself and I'm not generally a fan of veggie dishes.

Minced pork, tofu and aubergine chinese casserole.

Probably my favourite oriental dish.

Zucchini definitely is...

Ref aubergines, search for nasu dengaku. Bloody lovely stuff (especially from a place called Maki in Richmond, SW London).

I sometimes bung it in curries or pasta bakes to bulk it out. I find they rarely have any flavour of their own but do absorb spices fairly well.

One of the simple recipes with olive oil, garlic, salt & pepper.
