I think, but am not sure, that the wording on the rules for this sort of thing have changed and that the rule is that cars should be fitted with the same (or presumably better) cats that the car was built with originally?
e.g. "Where required, a missing catalytic converter becomes a reason for rejection." from

No idea what "where required" means, but I think things have sadly moved on from simply passing some arbitrary notion of polluting the planet.
That said...I would doubt it's feasible for every MOT station to know what every car ever made was equipped with out of the factory, and the more knowledgable MOT stations tend to be friendly towards sports cars IME.

PS On cars like this, I'm not convinced that the benefits of removing cats are that huge. IMO not huge enough to risk awkward questions at MOT time or in the event of needing to claim on insurance.
The biggest benefit tends to be noise (a 5bhp, 10bhp, 20bhp increase and a couple of kg of weight saved are simply not going to be noticeable on the road in a car weighing nearly 1,700kg+ and already kicking out 500bhp+).
