I can't seem to get a decent recording of the Chevy without some sound clipping on my Go Pro. Example here...

It seems on the sound graph that the sound is peaking at max when the annoying noise kicks in. Can anyone help please?

The white rubber vibration insert plus a decent mic will give you good results - i use http://www.olympus.co.uk/site/en/a/audio_accessori...
GoPros are rubbish for sound full stop 
For best results in your car use the open back and that clicking is the mount banging about, so you need to use the white nose clip thing (already been pointed out).
Your only real options are a stand alone sound recorder or using some sort of plug in mic. (have a look at the gopro 3 thread some people have had some fairly good results without spending to much)
