A carbon post is a really nice upgrade. The Canyon VCLS one is supposed to be the dogs danglies buts its priced accordingly. I have a 3T Dorico Pro which I like a lot and can wholly recommend. Two bolts simple to adjust and secure.
As for bars and stem, again its down to budget but also hand size and what you prefer in terms of position. I spend a long time on the top/hoods so I bought a set of 3T ergonova alu bars, nice and comfy with the ovalised top section so if you have big hands they are worth a look. I miss the aggressive position that the Ritchey bars on my Boardman had when I was on the drops though. Its a straight section almost 45 deg to the road which just feels really nice and low, you could tuck in and really get the speed up. They werent that comfy on the top/hoods though so I went with the 3T instetad. Search for Ritchey WCS logic ergonomic or anatomic and you should find them. I bought a 3T Arx stem just to finish it all off and keep it all looking nice!
Remember with bars some manufacturers measure from centre to centre of the drops, others form outer to outer, some flare out etc, so a 3T 44cm might not be the same as a Zipp 44cm... The Zipp Service Course stuff is really nice and light too.
Carbon bars are nice but I couldnt justify the cost and would worry about crashing with them. Even the Pros tend to use alu bars because the bikes are so light they dont need to save weight and the real sprinters like Cav found that the alu bars were stiffer and they could wrestle the bike around a bit more compared to when they used carbon bars.
Bar tape is personal preference but its fundamental to grip and comfort. I like Bontrager stuff, you can get gel pads etc to fit under it too.
