Birthday dinner help.

Help!
I have my girlfriend's birthday dinner this Friday and she has asked for venison. I am struggling to think of something that I have not cooked before.
My idea for the main course is Roast venison (liquorice/chocoate/thyme/juniper). Not ground breaking I know but I have never used these classic flavours together before. I would then serve that with confit venison 'sausage' with truffel and either roasted ceps or celery gratin. I will also serve it with a redcurrent jus.
Dessert is probably going to be pumpkin ice cream with something (ideas please!) and for starters I am thinking or Venison carpaccio with candided chestnuts and bitter chocolate croutons.
I need to try and decide what to cook by this afternoon as I have to go shopping and I need to start preparing today.
