Driving experience on a track for the Mrs, any recommendations?

The events run by Caterham are highly rated. A range of courses, good tuition and no silly rev limits, etc which many supercar experiences are ruined by.

Porsche Experience centre at Silverstone is decent value,90 mins in a 911S for around £275 including an instuctor.

I'm surprised, I did the drift and track day, found both good. Not done the slalom.Porsche Experience centre at Silverstone is decent value,90 mins in a 911S for around £275 including an instuctor.
Subaru Rally Experience use Castle Combe, I highly recommend them, £300 will get you a full day experience, morning in a RWD N/A Impreza, afternoon in the 4WD turbo.
