I was looking at DB7 GT at Bamford Rose the other week (in for an engine swap) and was very surprised at the poor design/build quality compared to a VH car. Plus the bills can be eye watering!
DB7's are the basis of the mk1 Jag XK8 underneath, Oh and Pilkingtons will only make the rear screen to order as there are 7 different variations (so don't break one!)

Without wanting to be biased towards the GT, but if you're comparing a DB7 to a modern V8 Vantage then you should really stick with a GT or Zagato (though very pricey).
The GT is a lot different to the standard DB7 Vantage with many little differences all adding up to a lot of difference between the two cars when driven.
Also Aston were rather conservative with the specifications of the GT, probably to not tread on the toes of the current Vanquish and the new emerging DB9 at the time ;-)
The downside is, there are not many GT's around and when they do become available usually command a premium above the Vantage models.
However, looking at the long term ownership plan the GT would be a better investment over any of the newer models (DB9 / V8V).
Someone at Aston did lay claim to the GT being a future classic, with so few built even a future barn find would still fetch favourable money in years to come.

By the time that happens most buyers wont have a clue what that third pedal is for
