Making this tonight to warm through for lunch tomorrow. Does anybody have any must try recipes that would work well being microwaved through the next day to warm up?

Very true! I used to hate Carbonara until I tried it in Rome where it was served without cream and contained lardons of pancetta rather than slivers of streaky bacon.

That bbc gf recipe works well and is now one of our regulars.

At a guess, Carbonara is not a next-day kind of food. Raw eggs stirred through hot pasta so they cook at the table doesnt lend itself to reheating in a microwave.

Pasta with a cream and bacon sauce (English carbonara) will reheat fine.

1 Clove garlic
Pancetta lardons
3 eggs, + 1 extra yolk
Parmesan.

Decent fresh pasta - get a pasta maker and do your own. The Gordon Ramsay fresh pasta recipe has a lot of eggs in and is rich but worth it.

Cooke the pancetta, add the garlic for a minute at the end. Cook the pasta,mix add the eggs stir, cheese and parsely on top. Authentic and easy.

As mentioned above, anyone putting cream in carbonnara should be shot.

In Italy they dont cook the egg. Often it comes in the shell and is mixed at the table. The heat from the pasta is enough to cook it.

yep, italian carbonara does not contain cream. it's become like the italian equivalent of chicken tikka masala.
