Nigel Copsey in Malton area is experienced in stonemasonry and conservation work (www.nigelcopsey.com)

Haven't used his services myself but he does a lot of work in the Ryedale/North Yorkshire area. Failing that, if Selby DC has a conservation officer, he/she might be able to advise.

Sorry can't help with a name, but you would probably be looking at next spring to get it done. It won't tolerate frost/freezing conditions whilst damp and takes days (maybe even weeks dependent) to dry at this time of the year.

We have an old house near York - all lime mortar & 2" bricks. Our local builder is probably not available for a long time, but I do recall he would insist that rendering is only there for a reason - often poor/damaged brickwork - might be worth trying to assess what`s underneath before it comes off - try a strong light at a shallow angle to pick up potential intrusions like blocked up windows/doors/old joints.
Good luck with it - it`s important to keep these houses looking good.
