Spice Rub Recommendations

Guys, can anyone recommend some off the shelf spice rubs for Chicken, Lamb and maybe even Fish?

I want to get back into cooking at home and move away from using marinates. Hoping to switch to dry rubs and grilling or baking the meat.

The Nomu dry rubs are excellent, came across them on holiday in Cape Town a few years ago.

The Lamb, seafood, peri-peri, cajun are all great. I'd happily try any of the rest!

Instead of buying pre mixed ones, make your own.

An example:

2 tsp salt
4 brown sugar
2 sweet paprika
1.5 garlic powder
1 cumin powder
1 onion granules
1 black pepper
1 oregano
1 thyme
1 mustard powder
Chilli to taste

Seems a lot but worth the effort and builds up your collection nicely.

This also works well. Quantities for about 2kg meat:

2 tbsp sweet smoked paprika (ordinary paprika will do).
1 tbsp mild chilli powder
1 tbsp soft dark brown sugar
1 tbsp golden caster sugar
1 tbsp garlic powder
2 tsp ground coriander
1 tbsp salt
1 tbsp black pepper
1 tsp cayenne pepper
1 tsp powdered ginger
1 tbsp dried mixed Italian herbs

1) Buy an indian spice box as found in asian shops and even Asda!
2) Fill with spices you like
3) when cooking, open the above and randomly chuck in spices with olive oil/yoghurt etc as the base of the marinade

Works for me

Works for me

This is my type of cooking, worth adding all spice, nutmeg, jerk seasoning, duck and goat mix
always have garlic,ginger and scotch bonnet chillies to hand

have family from the Caribbean and 95% of marinades will have a base of garlic, salt and pepper, ground nut oil, chili and a spice of your choice, then you can just throw in what you fancy its always good to experiment

currently using this quite alot, its bloody lovely and works on every meat i have tried it with so far as a marinade, makes killer steaks too! go on the above (garlic, scotch bonnet, ground nut oil etc) and leave for 24 hours smile
