Ok I have gone too long without playing Gran Turismo and COD

The PS2 died years ago and got distracted by real cars. I've finally decided to get a PS3... late to the game I know.

Seeing as I'll only be playing GT5 and CODMW... mostly single player and only going online for updates which version of the console is the most reliable, least likely to fry itself?

12Gb 120Gb 320Gb 500Gb?

120 should be fine if thats all your doing.

And GT6 is out shortly, so don't bother with GT5.

I'd avoid the 12GB, just because most top tier games nowadays need to a big install to work, GTA5 is 8GB, GT5 needs a HUGE update to work off the bat, not sure how much storage, but it took a full 24 hours to update for me, admittedly with a stty 4meg connection.

As for reliability, they should all be the same, AFAIK they're all the same hardware now, just with different HDD's (aside from the 12 which has a flash drive) plus they're the 3rd version of a nearly decade old device, any bugs long since fixed.

Go for the 12gb one and buy a 500gb laptop hard drive, install it and you've got a 500gb PS3 for not too much more than the 12gb cost you.
