Muffins need a surprisingly cool griddle to cook through before the outside is done. It is a balancing act between too hot so they don't cook through and not hot enough so they stick, the only way to get it right is trial and error and experience. Davey S2 said:

Now I do love a bit of cow it has to be said but I leave that type of thing to the Mrs. I like the baking side of cooking, muck about with ice cream too.

Thanks for the replies, Ill make another batch and lower the heat a little then.
