I assume photoshop offers a way to "feather" the edge of the selected area so you don't get a harsh line between the colour and the greyscale area?
I only ask because in the past I've carved images up in Paint Shop, and always got too much of an obvious line.
Guess it's time to hit the learning curve in photoshop!

Mrs S discovered a new way of doing spot colour, it's a hell of a lot easier than previous selection methods..
Select All
Copy
Paste
Desaturate layer
Use eraser tool to "bring back" the colour from the layer underneath,
Flatten Image when finished
I was amazed at how easy it was...
