Since the outside temperatures have dropped my car never seems to get up to temperature. Driving on the motorway is the worst, the temperature hovers around 35 and 40 degrees. I wondered if the thermostat was dodgy. Does anyone else have the same problem?

Car is a T350 4.0 SP6

Only had an S6 car for a few months and suffer the same problem.

I'm wondering if adding some heat shield / insulation to the oil tank would help maintain the temp, has anyone tried something similar?

The sensor in the oil tank can give false readings because of the cold air stream around it. So the real oil temperature is higher than the value of the sensor shows. Insulating the sensor can help a little bit.

I agree and after a while you will be able to tell without looking at the oil temp if the car is warmed up or not... It's something you feel and hear.

Thanks for the responses. So without sounding stupid...can you ignore the oil temp after about half an hours driving?

I do, but it did take me a couple of years to be confident to do so.

After 3 years I just know when it feels and sounds right to go beyond 3k revs

You will find that if you pull over in a lay by or services and stop the car... The temp rises fairly quickly to a more accurate level (not suggesting for a second that you let the car tick over long) however it certainly help you get a feel for a true oil temp.... Over time, as mentioned, you get a feel for it without stopping!... Enjoy :-)
