You might not find a huge difference in cost if you're due a plug and brake fluid change.

The minor for a 997 is £480 and a major is £610

the spark plugs are every 4yrs and brake fluid 2yrs and both priced independently of the service.

I checked the booklet but it doesn't state what the difference between the two were.

Rubbish, plugs are charged seperately as they are not every major. And as for cost depends on the car but 986/996 are £295 & £395 which in the SE is cheaper than all the indies.
Plugs when I checked on my Boxster were £75 & brake fluid the same, that was last year though. All of these include VAT.

Just checked pricing is currently the same. Major includes air filter & a few other bits. I do minor every year & major the following year, although technically I could go 2 years.
