I doing a mixed roast of various meats for Xmas dinner, fussy fking family.

Anyway I thought I would cook the meat the day before as it wont all fit in the oven. Can I make a gravy then and keep it in the fridge over night, or will it all separate and go ste?

What about if I just scrape the pan jus in to container and kept that and the whipped the gravy up to serve?

It will keep fine in the fridge overnight. If you are planning on adding cream to it at all, then don't do that yet... add that when you reheat it.

N oproblem keeping gravy overnight, hotel kitchen I worked in kept gravy for way longer.

uisng the gordon ramsay recipie which calls for cream so will put that in when reheating

Then it's not gravy. - A meat flavoured sauce maybe, very nice even - but its not gravy.

More than 100%.

If Gordon Ramsay thinks gravy has cream in it then he's a bigger tosser than I thought and his opinion on anything, especially gravy, should be disregarded.
