Is cooking a turkey in an Aga different to any other oven? I thought this cooking Christmas turkey for 12hrs + idea was left behind in the Victorian era....
Last year we did a Nigella recipe whereby it was left soaking in a bucket of spiced and herbed brine for some time before cooking, that was certainly tender if not a little salty, very good though.

We just cooked our yesterday for a family Christmas party.

We did it for 1hour in the top over with no foil over it, but with butter under the skin and streaky bacon over the breast. We then moved into the bottom oven for 5 hours, removed the bacon (and ate it!), tented the turkey in foil.

Beautiful and moist.

Oh, the turkey was 6kgs.
