Turkey leftover recipe ideas

Having bought a turkey the size of Big Bird I have loads left over waiting to be used.
Any ideas aside from the predictable curry?

A sandwich, salad, pie, burrito, enchilada or tart.

When you've made those and you've still got loads left then give it to a dog, cat or badger.

But don't throw away the carcass. Buy a cheap Japanese band saw off eBay and whizz the bones up in to tiny pieces in your garage. Watch your thumbs.

Boil the life out of them to release the flavour and reduce, portion and freeze for next year's gravy. Don't forget to label it or you'll forget what's in it.

Then, with the skin, sew it together in to a poultry suit and parade yourself around your basement with your tackle trapped between your legs.

You won't have wasted a thing.

Failing everything above, you could just chuck the lot in the bin if you've had your fill.

Coronation Turkey (though that's curried I guess)

My favourite is turkey salad. Sounds vile but tastes delicious, lettuce, cucumber, tomato, turkey, cold sausages if you have any left over, roast potatoes, sweetcorn, all chopped up in a bowl with some salad cream. Or be a little more normal and have it sliced with some normal salad on a plate.

How about ratatouille on top of rice and diced turkey?

Wasn't a curry as such but maybe too similar.....?

Mrs C chopped up the leftover chicken and fried it with onions, tomatoes, peppers and some chilli powder and served with salad.

Turkey leak and ham pie. Swmbo has bought some mini foil cases from lakeland, so we're making individual pies to freeze.

Strip all the meat off the bones and freeze it for turkey and ham pie in a few months time.

Save any skin, wing tips etc, and roast these for 20 minutes together with the stripped carcass.

Boil the above for stock in the society of a celery stick, a shallot, a carrot, a bay leaf and a few black peppercorns, and you'll have the basis of a tasty gravy for said pie.
