Lamb burgers/koftes (since lamb mince isn't always easy to find):
500g lamb neck fillet
1 red onion
1 clove garlic
2 green finger chillies
1/4 tsp allspice
1/2 tsp sweet paprika
1/2 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
Mix everything together and pinch out golf ball sized pieces and roll into balls, or flatten for burgers. BBQing is best for flavour, but the grill will do.
The great thing about the mincer is that you can process the onion, garlic and chillies through it, which saves a lot of time compared with chopping these by hand.
Yogurt dip/sauce for the above:
250ml natural yogurt
1/2 cucumber, peeled and de-seeded
1 green chilli, finely chopped
1/2 teaspoon cumin seeds, roasted then ground
Small handful of mint leaves (dried will do)
Pinch of sugar
Chopped coriander leaves over for serving
Cram the koftes into toasted pitta breads and drizzle with the sauce. A few pickled chillies, or some extra sliced red onion wouldn't go amiss either.

Never made my own mince but I use this recipe for my burgers..
50/50 Beef and Pork mince (200g of each will make 4/5 burgers)
1 tbsp Onion Powder
1 tbsp Garlic Granules
1/2 tbsp Hot Paprika
100g of Bread crumbs
1 Egg yolk
1 tsp of Worcestershire Sauce
Seasoning
I'm not a fan of chunky burgers with bits of onion etc in but if you are then substitute powder ingredients for some finely chopped onions and garlic (I soften these up in a frying pan and allow to cool before adding to mix).
I make my patties a similar size to BK, but cooked medium and then serve two on a brioche bun with melted cheddar and griddled smoked streaky bacon. Your own Bacon Double Cheeseburger.
