What 'Mystery Machine/Day Bus/Adventure Wagon' ??!

After a little inspiration please.
Looking to get out and about more this year with the family. Whilst my wife will NEVER be a camper (sadly) I do want a nice capable bus that we can load up on a Friday night, jump in at 6am on a Saturday and head to the seaside/forest/attractions in for the whole day, driving home after dark. Room to seat 5 COMFORTABLY and room in the back for bikes/bags etc (don't want a trailer, thanks).
A van sized vehicle will also be very useful for carrying equipment around as I will be gigging more this year, and something that's simple enough to sleep in for 2 hours between my split shifts that happen 5-6 weeks a year.
I've been leaning towards a Caddy Maxi Life but would actually be happier spending around £5k.
As a bonus, if it does 40mpg I can use it as my every day car (30k a year) and a double bonus if it's classed as a van so I can put it through the company.
I doubt any single vehicle will answer all of these criteria, but it'd be nice to hear some ideas and see how close we can get!

I can recommend a VW Caravelle, seats 6 comfortably (7 if someone squeezes in the middle at the back) and is great for days out - picnics are great as you've got a table and swivel chairs etc.
You'd be looking at a T4 on that budget (the newer T5's start around the £10k mark).
Not the most frugal of beasts either. I've got the 2.5 diesel and I'm lucky to get 25 - 30 MPG when I'm taking it easy. They do go well though and great fun to chuck about.
