This CIE lark definitely makes buying and selling privately a challenge unless you are willing to accept a period of being bus bound.

I want to buy a new car and will have a period of needing to have both insured. My current insurer (RAC) says they can't do this and recommended I move my policy to the new car and use dayinsure to insure the old one while I sell it. I just wondered if anyone knows whether this has any impact on the CIE rules and whether the old car will still be on the MID database?

Your insurers are being pricks. They (or their competitors anyway) always used to be able to do just that.

It shouldn't be an issue to your insurers as whilst they are covering two cars (and charging you accordingly), you can only drive one at a time.

I would phone and ask to speak to someone more senior. Likely you just got a spotty teenager on the phone who didn't know how to do it, so fobbed you off.
