defrosted the chops yesterday as they were for dinner last night, but last minute we went out for food.
chops have been in the fridge since last night when they had thawed out, so are they ok to have today?

A cat is useful in this respect: they won't eat anything that's even remotely 'off'.

If they were completely fresh when they were originally frozen, I wouldn't even think twice about eating them today - they'll be fine.

A lot of people will defrost stuff for just as long - normally I take things out the freezer before I go to bed, then eat them the next evening. If you took them out in the morning then they would absolutely be fine next day.
