What to do with spinach

Got a big bag but don't know what to do with it. Not a big fan and trying to eat more of it so suggestions welcome.

Buy a (masticating) juicer and juice it.

The same goes for other green veggies you want the health benefits of, without having to eat pounds of the stuff.

Google 'green juice' for recipes.

Poached eggs on a bed of wilted spinach, on top of toasted bagels. Dress with mayonnaise mixed with lemon juice and plenty of freshly ground pepper.

Had a spinach and 3 cheese omelet for dinner...or lunch, could have been tea. I keep forgetting what I should be calling that meal eaten at noon.

Lamb Saag

Eggs florentine
creamed spinach with steak
baked eggs with spinach and ham
spinach and mushroom stuffed chicken breasts
spanakopita

Spinach and lemon cream sauce, toss through pasta and have with a pan fried salmon fillet.

When you are a spotty teenage cook learning, have President Mitterrand fly in for lunch on his Jet. A whole huge sack of spinach was needed to be picked and de-spined, wilted with melted Sark butter and duck eggs poached and dressed upon the pile.

Fry some mushrooms and bacon then stir into the spinach and put cream over the top. Lovely breakfast. Poached egg on top if you like too.

Steam until soft - 1 minute ! - chill in iced water - remove and squeeze all the water out by hand. Mash together with half a packet of Philly cheese.
Spread mixture on a slice of raw salmon - wrap in ready made frozen puff pastry - egg wash - 220 for 35 mins
Voila - Salmon en croute - Yum.

Yes, but you want young/baby spinach.
